labor day

Happy Friday friends! Not only is it Friday, but it is the beginning of a long holiday weekend. I don't know about you, but I am primed and ready to spend the weekend hanging with friends and family and enjoying the last little bit I can get out of summer. This summer has been forever long, and while I've loved every second, I'd be lying if I said I wasn't ready for fall. The only real part of fall that I could live without is that it is starting to get dark earlier. Bummer. But, the cooler nights are a welcome change.


On Sunday I'm going to a Labor Day/Birthday party for one of my cousins. She turned the big 3-5 yesterday! We're going to party all night long, and that's what I made my Friday Fancies outfit to reflect. It has been getting super chilly here at night, I think down into the 50's, so I'll be needing that sweatshirt!

biker babes.

Jenn and I are working on conquering the bike. She is much more proficient than I am, but she's a great teacher. Last week I took my first official outdoor bike ride. After that, she and I were looking at "races" to train for. I think bike races scare me way more than running ones do. I'm a bit terrified of being on the bike. I'm not good at going fast, even with a helmet on. I was going 13-15mph the other day and thought I was going to fly off the bike and die. Jenn helped me through it a little though, so I'm pretty lucky.

So far in the last week, I think I've done about 20 miles on the bike, mostly thanks to the 10 mile ride Jenn and I did on Tuesday night! 10 miles, at one time! Wahoo!! I felt SO accomplished after that.

Seriously loving these flowers. They're simple and white with just a bit of sparkle.



Sometimes I think this, and I get sad. But then I remember the man I am lucky enough to have in my life and it makes things ok. I think we always think back on past loves with fondness, but it's helpful to remember that they are in the past for a reason.



Definitely a gorgeous space. What's not to love about the neutrals and the green?

summer breakfast


Last week I gave you a peak into what this fall is going to taste like, but today we're back enjoying the summer harvest. Last week on a whim I made Mike and I a summer vegetable frittata for breakfast and it was spectacular and insanely easy! With the vegetables that are so bountiful right now, it's easy to load up on the veggies and make it a super healthy breakfast.


Summer Vegetable Frittata

1 tablespoon butter
1 bell pepper, finely diced
1/2 red onion, finely diced
1 zucchini, diced
garlic powder
salt
2 eggs
4 egg whites
1 scallion (optional)

Preheat your oven to 400 degrees.

In an oven safe frying pan melt the butter and add in the pepper and onion. Let them soften slightly stirring occasionally. Once they are slightly softened add in the zucchini and sprinkle with garlic powder and salt. Saute the vegetables for a minute or two until they are soft.

While the vegetables are cooking, beat together the eggs and the egg whites until fluffy.

Pour the eggs over the vegetables and kind of shimmy the pan a bit to make sure the eggs get under the vegetables and in all the nooks and crannies. Then transfer the pan to the oven and let it cook until set and slightly golden brown, about 15 minutes.

At this point I flipped it out onto a plate and sliced and served it. You could totally serve it out of the frying pan to avoid dirtying an extra dish. Top with the scallions for a bit of a fresh taste. I got 3 servings out of this and estimated it to be about 150 calories per serving. Pretty good for a very filling breakfast!

welcoming fall

I know it's a week early but we celebrated the end of summer and beginning of fall this week. It was opening weekend of a friend's apple orchard. The apple crop is about 2 weeks early this year because of the crazy weather we've had here in NY.


Friday night we celebrated my cousin Zach's birthday. We had a great time hanging out and enjoying his basketball (Miami Heat) themed party. It was delicious with pizza, wings and salad. Totally delicious. The cake was a bit hilarious because they messed it up like whoa.


 Saturday morning I took my first real outdoor bike ride. It was crazy and I'm way sore from the bike seat (tmi??) I have no idea how bikers do this! Then we went to the Orchard and then my sisters both came and stayed at my house for the night. We played games, had a big barbecue and all in all had a  great night.








Sunday was a bit more low key. We went and walked over the Hudson River. Then we came back, had lunch, played some cards and then it was time for them all to go back to their houses.









Sunday night I took another bike ride. It really hurt just as bad this time...Although I hear at some point I'm supposed to get used to the feeling. I sure hope their right about that one!

road trip!

Once, when I was 14, my parents decided it would be a brilliant idea to put the 5 of us into a Lincoln towncar and spend 30 days driving 10,000 miles around the country. Without a doubt it was the absolute best vacation I have ever been on. With all the fancy islands I've visited, all the princess I've run with, nothing competes to 30 days seeing the beautiful countryside with your family. Not all kids could handle it, but we did. And we did it without a mini van, without a dvd player, no nintendo, and no real electronics beyond portable cd players and a laptop computer whose only purpose was to have maps! There were lots of awesome times and a few mishaps, but it was definitely a memory I cherish with my dad.


So when we were tasked with a road trip outfit for Friday Fancies this week, I was stoked. I cannot wait t do this kind of trip with my kids one day. To torture them with music and to show them the beauty of "mountain days".  My outfit is super cozy and perfect for changes in weather that may come along the way! Yet it has pretty girlie touches that I just love.

proud alumni

This week the Princeton Review released their rankings of the best colleges across the country. There are a bajillion categories so it's pretty likely that your alma mater will hit the top 10 in at least one of the categories.  My alma mater did in fact make the top ten, but it didn't stop there, it got the top spot!!
Northeastern University was ranked number 1 in career services! Go NU!


I loved college. I seriously loved being there. When I was looking at schools, I was looking at going for computer science and my dream school was MIT. When I made my trip to look at colleges, MIT was my first stop. But while up in the Boston/Cambridge area, you're so surrounded by colleges that it's hard to not look at others. We saw Harvard and BU and a bunch of others. We actually accidentally drove through Northeastern. I made my dad park the car so I could run to the student union and grab an application. I fell in love.


The dream of MIT faded away and I decided (thanks to quite a bit of scholarship) that I would be heading to Northeastern University's college of business administration. I loved my 5 years there and wouldn't have traded them for anything in the world.

I love this look. I'm starting to get a little bit excited for fall Browsing pinterest with all of the beautiful fall looks being posted definitely has me excited.



The other thing I could oogle all day on pinterest is kitchens. I think I have 100 pinned. I spend so much time in the kitchen that I'm totally drawn to gorgeous, organized, functional kitchens.



I'm a bit enamored with this cake. I think it's the metallic sheen. Just so pretty.
